What'cha Cooking: Hot Dog!...Corn Dog That Is!

Today for lunch I decided to try out the recipe for Corn Dogs from Hillbilly Housewife. They came out wonderful! Sorry ya'll that is not my picture of my corn dogs....they did not stick around long enough for me to snap a pic.

I had a lot of batter left over..but not to fear! I just turned the extra batter into corn fritters....I added some extra sugar and mixed it right in the cup and dropped the batter into the already hot oil and the children LOVED IT!

They were crispy on the outside but soft in the inside! It was a hot dog of a lunch!

Recipe

1 cup milk

2 medium eggs

1/4 cup oil

2 tablespoon sugar

1 teaspoon salt

2 teaspoons baking powder

1 1/3 cups corn meal

2/3 cup flour

1 to 1- 1/2 pounds of hotdogs

1/2 cup flour (for dusting)

Oil for deep frying

Popsicle sticks

In a large bowl combine milk, eggs, oil, sugar and salt. Mix very well. Sprinkle in the baking powder, corn meal and flour. Stir up until it is a slightly thick batter.

Use a paper towel to dry off hotdogs make sure they are nice and dry then dust with flour, coat them completely or the batter won't stick. Then shove the Popsicle sticks into the floured coated hotdogs and then set aside.

While your doing all of that heat up your oil until it is almost smoking but not smoking.

I poured my batter into a cup that was longer then my hotdogs and I dipped the hotdogs into the batter. Let the excess batter drip off and then drop into the hot oil and fry.

Only put two hotdogs at a time so that they fry properly.

Thrift Store Find

I found this wonderful chair at my neighborhood thrift store...I was so happy to find it because I was in need of a nice chair for my daughters desk that I purchased on craigslist.

They had an array of chairs but none of them spoke to my heart until I saw this one and it said "I am the one you're looking for!" the chair looks a lot wider in the picture then it is in person.

The chair must be an antique because it is small compared to today's dinning chairs and the craftsmanship and sturdiness of the chair is excellent and so was the price at $8!

Once I cleaned it up and spray painted and put on some new fabric for the seat it looked GREAT and as I suspected when I first laid my eyes on it.....It looked as though it was meant for my daughters desk!

Here is a close up of the detail of the chair I just love the lines on this little chair it is so feminine.

I love the chunky legs .

Here it is all wiped down and ready to be painted.

TaDa! here it is all painted and in it's new home and serving a new purpose.

Don't cha just think that it was made to go with the desk?

In My Nest: My Sweet Little Girls Room

I have been really busy around the nest this week....painting and spray painting and more painting! I am so done with painting that I don't want to see another paint brush or can of spray paint for months!!!!

Oh but I must endure some more spray paint in the name of decorating my bookshelf (I'll tell ya'll more about this in another post).

I am so happy to be finished with the children's room and I am so happy with the results...I just love my daughters room...ohhh but I also sooo love my son's room (I better take pictures before they destroy it!).

Yesterday I made yummy Peanut Butter Fudge from my cute little Cook Books from Amish Kitchens Candies, Beverages and Snacks cook book.

The fudge came out creamy and deelish! I think it makes a wonderful peanut butter filling for chocolate covered peanut butter squares (like Resse's Peanut Butter Cups).

I will be trying some more of the delightful recipes in this cute little cook book.

Here is the recipe:

4 Cups Sugar

1 Cup Milk

2 Tbsp. Butter

1 Tbsp. Vinegar

1 lb. smooth peanut butter

2 1/2 Tbsp. Maarshmallow whip

1 tsp. Vanilla

1. Mix together in a saucepan the sugar, milk, butter, and vinegar. Boil slowly to the soft ball stage.

2. Remove from heat and sir in peanut butter, marshmallow whip, and vanilla.

3. When mixture begins to set, cut into serving pieces. Then refrigerate. Remove pieces from pan only after the candy is cold and hardened.

"Around The Kitchen"....Making Sourdough Starter

I have been thoroughly enjoying Candy's Blog and I had decided to take the chance in starting my own Sourdough Starter.

I started my Sourdough Starter on Tuesday and unfortunately I did not take any pics of it but I have tried to take pics of the process.

Simple Recipe Sourdough Starter

A plastic container (not metal, it may react with the active Sourdough) wash and clean thoroughly.
Add one cup of wheat or white flour and one cup of spring water. You can use tap but you have to be sure that there is no chlorine in the water.
Stir all together and cover with a clean Floursack Cloth
or some other sort of clean cloth and secure it on top of the container using a rubber band
Place in a warm place in your kitchen away from any sort of contaminants
Continue to add 1 cup of flour and 1 cup of spring water for 7 days and put it back into it's safe warm spot. On the 7th day you can try to bake some Sourdough bread using your new homemade Sourdough Starter.
Put in the fridge on the 7th day and continue to feed once a week. Make sure to wash your container when you think it is time for a washing...you can just transfer you Sourdough Starter to another container and then transfer back into it's clean container when you have washed it.

This is what the Sourdough Starter looked like after adding another cup of wheat flour and water and stirring it all in....notice the bubble (this is what you want to see in your starter) I read.

I then placed a Floursack Cloth on top and secured it with a rubber band, I then placed it in a warm spot in my kitchen....and this has been it's home for the past few days.

This is my Sourdough Starter on it's sixth day...I had continually added 1 cup of water and 1 cup of wheat flour everyday (except for one day I missed). You can see some "hooch" (liquid) in the Sourdough Starter. My Sourdough Starter has been quite bubbly and at this point it has a very unpleasant smell. (that is normal) I read!

This is what my Sourdough Starter looked like when I took off the Floursack Cloth to add more wheat flour and water to my Sourdough. You can see all the bubbles and I could even hear some fizzing sounds (all is normal).

This is my Sourdough Starter all mixed up after adding more wheat flour and water to it. I sat it back on the counter in it's little spot and come Tuesday (God Willing) I will attempt my 1st batch of Sourdough Bread......shoot any sort of baked bread in the oven for that matter!

I will update with pictures on how it all came out and what lessons I learned along the way!

I'm sorry about the late post but my Internet was not working after we switched providers but without any further ado..here is this weeks "From Scratch Saturdays" project...Homemade Baby Wipes!

I have been making these for about 2 months now and I love them! They last us for about a month...because I use them for wiping hands, noses, feet, tears, messy faces and bottoms.

They are so easy to make and all the ingredients are common when you have small ones at home.

Simple Recipe Taken From The Duggar's Book "The Duggars 20 and Counting"

•Cut a whole roll of Bounty paper towels into thirds (we've found that Bounty is the only brand that works. Use an electric knife for best results).

•Place one of the halved rolls vertically into an empty and thoroughly cleaned one-gallon ice cream bucket. In a large measuring pitcher, mix two cups water, two tablespoons baby oil, and one tablespoon rubbing alcohol (some families also like to add a tablespoon of baby bath).

•Pour the liquid over the halved roll of paper towels in the ice cream bucket, and soak for 30 minutes. Remove the cardboard center. Feed the top corner of the paper towels through an X-shaped slit you've cut in the lid of the ice-cream bucket so you can pull out and tear off one “wipe” at a time."

From Scratch Saturday's...Homemade Yogurt, Deordorant & Ice Coffee

Hey ya'll I am so excited about some of the things I made from scratch today! Let me start off by saying that today when I woke up this morning I was greeted with a wonderful crock pot of fresh homemade yogurt!

Ohhhh was I pleased in the way it turned out! It was my first time ever making yogurt and I plan on doing it again very soon (it is running out fast!).

I used the recipe from Candy over at My Blessed Home...she has so many wonderful ideas and recipes over at her blog. I also used her recipe for homemade deodorant.

My youngest daughter was in need of some deodorant and I was not about to purchase that toxic stuff they sell in the stores...so I thought why not give Candy's recipe a try.

It was very easy and simple and it glides on real easy (I tested it on the back of my hand) and it glides on clear no streaks or white messy residue.

I hope it does the job! I made one change to it and that would be....giving it a name! I have decided to call that recipe " Caribbean Island Deodorant" because of the coconut in it...the coconut is not over powering it is very light but it made me think of an Caribbean island.

I'm pretty pleased with my from scratch projects for today...Oh I also made me some wonderful and delicious Ice Coffee...just to think that one cup of coffee with lots of ice yielded me a mega large cup of Ice Coffee! LOL!

I can't believe that I have been on occasion spending up to $2 buck on a cup of Ice Coffee that is actually one cup of coffee that looks like a large!

Well I will choke it up to the novelty of it....but uhmm that novelty has faded....and I enjoy my Homemade Ice Coffee so much better and I enjoy the price too!

Simple Household Ingredients

1/4 Cup of Baking Soda

1/4 Cup of Corn Starch

A Few Tablespoons Of 100 % Coconut Oil

Mix dry ingredients first and then add Coconut Oil and make into the consistency of the store bought stuff...and then stuff into an old (washed out) deodorant bottle.

*Thanks Candy!The yogurt is deelish! The small half empty mason jar is the jar that I used to make individual servings with fruit. The children just about ate up those jars.

I have only the big jar of yogurt left and I plan to use that for yummy smoothies! I took a page out of the Hillbillyhousewife's book and put my store bought yogurt into ice trays and froze them and after they were frozen I popped them out and put into a baggie to use as starter for a later date!

I hope that works! We will see because soon I will be making another batch.

My Large Ice Coffee...I also like to make a French Vanilla Ice Coffee as well! It's as easy as PIE!

Simple Ingredients

Cup of Coffee

Sugar (or any other type of sweetener)

Cofeemate Creamer (or milk, half & half, or evaporated milk)

A Teaspoon of Instant French Vanilla Pudding (for French Vanilla Ice Coffee)

Lots of Ice Cubes

Stir in sugar, creamer, and pudding mix into hot coffee and mix well. In a plastic cup ( I used an old washed mayo container) put in lots of ice (to the top) and pour hot coffee mixture into the cup of ice and stir....add a straw for sipping...and that's it!

(Excuse the mess on the table...I had to clean out my side board table so that I could sell it and also so that I can get my great-grandma's dishes out so that I can display them in the cabinet.)

Oh my goodness I am just sooo excited to have found such a wonderful treasure!

While searching on my most favorite yard sale website in the entire world I came across this beauty right here. There is a story to tell about how it all came to pass but unfortunately I am pressed for time so I would have to tell ya'll later about how I came to find this sweet little china cabinet

I still can't believe how much I paid for it......can you guess? I bought this China Cabinet for $85 dollars!!! and it is solid oak and very sturdy and it fits perfectly in my dinning room (like it was made to be there) and my great-grandma's dishes look like they have been waiting for this china cabinet forever!

I'm one happy momma right now :-)

My Family Holiday Tradition

"Oh Christmas Tree, Oh Christmas Tree" "You Better Not Pout, You Better Not Cry" "Its A Beautiful Sight We're Happy Tonight", "Away In A Manager No Crib For A Bed The Little Lord Jesus Lay Down His Sweet Head".

Oh, the songs of the Christmas Season, how they bring back memories of the days when I was a child.................

My mother, brother and I are at the town laundromat, the scent of laundry detergent and bleach and the smell of warm clothes fills the air, my mother is busy folding clothes at the yellow folding table and my brother and I are staring out the window, oh how excited we are, it's Christmas Eve! The biggest and most important day in our lives besides Birthday's of course. My brother and I blow on the windows to draw our names and to draw pictures, it is so cold outside it's one of those Chicago winters, the street lights are just coming on and the day is given way to night.

My mother puts our warm clean folded clothes in the laundry bags and draws the strings and says "let's go". We load the clothes in the trunk of the car and my brother and I huddle up in the back seat as we wait for the heat to finally kick in, my mother turns on the radio and the sounds of Christmas Music fills the car. On the ride home we look out the windows to enjoy the soft pretty lights of all the homes that are decorated for Christmas, the soft glow of the Christmas Trees in the windows just brings a warm fuzzy feeling inside.

We reach our 2 bedroom apartment and help mom unload the car and we carry the slightly warm laundry bags up the one flight of stairs to our apartment. When mom opens the door the smell of fresh pine surrounds us, my mom could not afford to purchase us a live tree every year but she always had real pine branches that she laid on our hot water radiator and the warmth from the radiator intensified the smell of the pine branches she laid on top of it. The Christmas Tree lights blinking on and off and the soft glow of our faux fireplace with all our stocking laid in a row makes me feel so warm inside our home feels so cozy and warm and that feeling of Christmas is in the air.

We unpack our laundry bags and put away I freshly, neatly semi warm clothes in our drawers. My brother and I get ready to take our baths and my mother washes my hair and puts my hair into the prettiest ponytails and now it's time to put on my new Pajamas, my mom always buys us new pajamas to wear on Christmas Eve. My brother and I are all ready to take our Christmas Eve pictures in our NEW pajamas. We do various poses, me by the faux fireplace, my brother by the glowing Christmas Tree, me carrying the plate of cookies and the glass of milk for Santa Claus to the coffee table. After all the pictures are taking my mother tucks us into our warm fresh laundered beds and kisses us Goodnight.

Oh how excited we are, we whisper to each other and giggle for most of the night, trying so hard to stay up so we could catch a sight of Santa Claus but as we whisper and giggle the sleep hits us and before you know it..... It's Morning!

Who ever is up first has to wake the other up before they go into the living room to see all the toys and goodies that Santa left us. We both run into the living room but before we reach the living room we see the dining room all decked out with balloons and streamers all on the ceilings and walls and the table with all types of scrumptious goodies, like Strawberry cake, Coconut Cake, Christmas Cookies, Oreos, Hard Christmas Candies, Soft Gooey Christmas Candies, Cheetos, Potato Chips of all Flavors, Doritos, Nuts of many varieties, Crackers of all kinds, cheeses of all kinds, Cheese on top of crackers, Pigs in a Blanket, Salami rolls, Fried Sausage & Cheese with a toothpick, olives, pops, punch, so much food it looks like a Dream! Under the Blinking Glowing Christmas Tree our presents, mountains of presents, A big toy train for my brother, a huge playhouse with a inflatable sofa, chair and cocktail table with little toy plates on top with goodies inside and my favorite kitchen set from last years christmas. Twin dolls with bunk beds, so much to play with so much to eat. "Mommy! Mommy! Santa was here, Look at What he Did!

*This is how Christmas was for me and my brother every year, my mother was a single mother and she always went above and beyond for us and on Christmas she made it so magical so special that I myself have a hard time trying to duplicate it. Now that I have my own family I try to duplicate this with my own children but for some reason I can't quite do like my mom.

Fall Is Upon Us

Well it's officially fall! Yeah! I love fall, the colors, the cool crisp air, the warmth of our home, hot chocolate with marshmallows. It's time for me to decorate the house for fall, bring out the rugs to warm the floors, put out the fall foliage, candles, change the curtains, put away the summer bedding and bring out the warm and toasty blankets to curl up under on a chilly day. It is time to warm up our home.

What'cha Cookin? Updated With Recipe

With the weather getting crisp and the leaves turning colors and falling to the ground there is no better time to make................Homemade Chicken Pot Pies!

This recipe is delicious and easy to make,

3 to 6 boneless Chicken Breasts (depending on how much chicken you want in the pot pie)

2 Boxes of Pilsbury Dough (in the refrigerated section) Or you can make your own. 2 boxes make 2 pies

1 1/2 sticks of unsalted butter
2 cups sliced yellow onions (2 onions)
1/2 cup all-purpose flour
2 1/2 cups of Chicken Broth
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons heavy cream
1 1/2 cups large-diced potatoes (1/2 pound) (optional)
2 1/2 Cups of Frozen Mixed Veggies (I use the one with corn because we love corn) Pick out the green beans.

Cook Chicken Breast in oven until done. Cube the chicken.

Melt the butter in a large pot over medium heat. Add the onions and saute until translucent, 10 to 15 minutes. Add the flour, reduce the heat to low, and cook for 3 more minutes, stirring occasionally. Slowly add the stock, salt, and pepper, and bring to a boil. Simmer for 5 more minutes, stirring occasionally. Add the heavy cream and season to taste. The sauce should be highly seasoned.

Cook the potatoes in boiling salted water for 10 minutes. Lift out with a sieve and drain well. Add the Cubed Chicken, potatoes, mixed vegetables to the sauce and mix well.

Preheat the oven to 375 degrees F

Fill your pie dish or individual bowls with the filling and lay the top crust on top and brush the dough with egg wash and make 3 slits in the top. Sprinkle with sea salt and cracked pepper. Place on a baking sheet and bake for 1 hour, or until the top is golden brown and the filling is bubbling hot.

**NOTE** TO MAKE BEEF POT PIE JUST SUBSTITUTE EVERYTHING THAT IS USED FOR CHICKEN WITH BEEF. YOU WILL NEED TO HAVE YOUR BEEF CUBED SMALL.

Fall & Apple Pie

Fall & Apple Pie (Updated with recipe)

Yesterday I baked an apple pie (my first apple pie) and it turned out delicious! Now, I took some shortcuts but I added my own flair to it. Next time I will use fresh apples and prepare them like the Apple Filling I used. I will tell you all how I spiced up the dull Apple Filling when I post the recipe for this quick and easy Apple Pie.

Warm Apple Pie with Two Scoops of Vanilla Ice Cream....YUMMY!

This is a very simple and easy (cheating) Apple Pie!

I don’t know the exact measurements so please make it to your taste.

2 Cans of Apple Pie Filling

1 box of Pilsbury Pie Crust (in the refrigerated section)

4 Tablespoons of Butter

Nutmeg (to taste)

Cinnamon (to taste)

Vanilla Extract (to taste)

Put Apple Pie Filling in a pot and mix in the following ingredients. Let simmer until all the flavors are well mixed. Let Cool.

Divide the piecrust and put one on the bottom of the pie dish. Fill pie dish with filling and lay a few small chunks of butter onto the fillin. Lay the other dough on top and cut 5 slits into the dough.

Bake until bubbly. Be careful not to burn the edges of the crust!

That’s It! Serve warm with a scoop or two of vanilla ice cream.

I Don't Know Much About Table Setting But.....

It looked nice in these pictures (lol)! I remember this day very well, I just had given birth to our 4th child in July of "05" and was so excited about having everyone over for Thanksgiving so that they could spend time with our new addition. I did not have a complete dinner set and I had to mix and match dishes I had purchased the white dishes at our local grocery store in "00" and the other dishes were handed down to me they had belonged to my Great Grandmother.

I made the simple centerpiece using some fruit I had in the Frig, the glasses were spruced up with some old napkins that I had for awhile (someone handed it down to me). WHOLA! a simple table ready for all my family and friends! Did I ever tell you about the day we had close to 40 people show up at our home for Thanksgiving? Oh that is a story to be told for another time!

Beef Stew & Night Before Breakfast Recipes

I have tried these two wonderful and delicious recipes from my new cookbook "The Best Of Mennonite Fellowship Meals" and they were very easy and good. I of course made a few changes either because I did not have what the recipe called for or I thought it would taste better if I added this or that. I have added my changes at the bottom of the original recipes.

Beef Stew

1 1/2 lb. Beef Cubes

1 Medium Onion, chopped

2 Large carrots, chopped

4 medium potatoes, cubed

Salt and Pepper to taste

1 can Golden Mushroom Soup

16-oz can peas

1. Put beef cubes in roasting pan. Cover with onion, carrots and potatoes. Season with salt and pepper. Pour mushroom soup over ingredients.

2. Bake 350F. for 3 1/2 hours. Add water if needed

3. Approximately 1/2 hour before end of baking time, add undrained peas.

Variations:

You can use frozen mixed vegetables if you don' have fresh carrots. You would not need to add a can of peas. You should also add the Mixed Vegetables about 1/2 hour before end of baking time.

Instead of adding water add a 1/2 of can of Beef Stock.

Add a little Garlic Powder (not Garlic Salt) also as a seasoning

Night Before Breakfast

1 lb mild sausage

4 slices bread, cubed

1 cup grated sharp cheese

6 eggs

2 cups milk

1. Brown sausage and drain. Set aside

2. Arrange cubed bread in bottom of greased 9 x 13 baikng dish. Place sausage over bread and sprinkle cheese over sausage.

3. Beat eggs and milk together and pour over casserole dish. Refrigerate overnight

4. Bake at 350 degrees for 45 minutes.

Variations:

Add salt, pepper and 1 tsp. of dry mustard to egg and milk mixture

Sprinkle bits of butter on the cubed bread before adding the sausage

Interesting Find

My husband found an interesting piece of history in his wallet recently. He found a 1957 $1 Dollar Silver Certificate. We plan to frame this piece of monetary history right along with a $1 Federal Reserve Note.

It is such a shame that we can't redeem our sliver certificate for actual silver even though it does say "One Dollar In Silver Payable To The Bearer on Demand". It still is pretty interesting especially when you read the words "Silver Certificate" verses the "Federal Reserve Note" and especially these words "This Certifies That There Is A Deposit In The Treasury Of The United States Of America" it just signifies so much on how our dollar use to be backed by actual Silver and Gold and now the dollar is backed by nothing but a mere "I'll gladly buy today and pay you back tomorrow".

Well we will enjoy this little dollar and I think it would be the perfect time to show the children this video.

Oh I am just so excited to show ya'll my Big Reveal!!!! I have dreamed of this moment for so many years and through God's blessings we are the proud owners of a........................................................ NEW KITCHEN!!!!!!

We have lived in our home for 6 years and for 6 years we have lived with this outdated and non functional kitchen, we made due with the provisions that God had given us and I tried to make it look as nice as possible by decorating it.

I only had use of 3 somewhat workable draws but all of them were falling apart so if you were looking for a utensil 9 out of 10 times it may have slipped through the crack in the bottom of the drawer and ended up in the cabinet below!

Here are some photos of the old kitchen

This kitchen was the original kitchen of our home it was built when they 1st built these townhomes about 37 years ago.

The faux brick....well it was brick but it was inlaid into the wall and it was very icky! I cleaned it but that did not help much! Yuck!

All the cabinet doors had been painted about a dozen times or so by people before us...there was mounds upon mounds of paint on the cabinet doors. The cabinet doors were press board or something but the cabinet itself was wood......rotten wood!

Here is the kitchen all ready for the tear out!

Notice the fluorescent light fixture in main part of the kitchen, it was not very good on the eyes.

This is the eat in part of the kitchen, notice the very old light fixture above. I tried to clean that thing but there was so much grime and grease on it, it was almost impossible for it to be totally clean.

Ahh there's the cabinets in a pile! When they took out the base cabinets they just crumbled onto themselves, they were rotted out! The only cabinets that stayed in tack pretty much were the upper cabinets.

HERE IT IS!!!!

Here It Is! My New & Improved Kitchen! With a New Dishwasher....something I did not have before! We also got a new Fridge with an ice maker.....Yeah!

The cabinets are Maple with a dark stain. The counter top is Buttercream Granite Laminate. The paint is Tropical Tan (but it looks like a brown).

We added a nice backsplash and under cabinet lighting, which comes in pretty handy, I found out yesterday! The under cabinet lighting is really nice cause it has 3 different settings for the lights you just touch the button gently and choose which lighting is best.

We added recessed lighting in the main part of the kitchen (much better lighting then the old fluorescent light we had). My husband put the recessed lighting on a dimmer (He did a great job!)

A new ceiling fan in the eat in portion of the kitchen, this should come in pretty handy in the summer because our kitchen faces south so it gets a lot of sunlight and it can get hot in the summer months. (My husband put this on a dimmer also) We wanted the switch to do double duty we wanted it to have one switch to control the fan and one to control the light but our house has old wiring and it would of took to much to get that to work out and would of cost more money for the rewiring.

We added crown molding in the entire kitchen and also added a more decorative molding around the window and the door.

Oh and here is my sweet lazy susan! I have always wanted one of these things! I got so much baking stuff and all other sort of things that will go so nice in my Lazy Susan!

Well that's it ya'll.....that's my Big Reveal! It was very interesting and rewarding! Now I can't wait to eat some real food instead of all the take out and sandwiches.

Thank ya'll for sharing in this wonderful blessing that God has given my family! We know and understand that this is such a blessing and not just for us but also for the family who will come after us. We are so happy to have the opportunity to leave something better then when we came! God is so good! Yes He Is!

Our First Meal In The New Kitchen........Chicken Georgia Ya'll !

(This Is Not My Chicken Georgia)

Oh thank ya'll for the wonderful comments! I must say that I am on cloud nine right now! Well I have been busy cleaning up all the dust and stuff that has settled around the house but not to busy to cook our first meal in our new kitchen.

Last night was the 1st night we had a homecooked meal in about 2 weeks! To say the least we have been starving for a good homecook meal. Soooo what did I fix for dinner last night? I fixed Chicken Georgia & Rice with a some Crusty Chewy Fresh Baked Bread and a Cucumber & Tomato Salad. It was such a great feeling to be all together in our new kitchen, the dinner was deelish and the company was so sweet!

I forgot to take pictures of the meal...it looked so pretty (maybe it was the lighting, hehehe) but I will be glad to share the recipe for Chicken Georgia (Paula Dean Recipe) with my little tweak. This is a easy and delicious recipe

What You'll Need

Butter

Sweet Yellow Onions

Button Mushrooms (chopped)

Red Bell Pepper

Boneless Chicken Breasts

Shredded Mozzarella Cheese

Salt

Pepper

*I did not measure so you would need to make it according to your taste

Chop up your veggies in a thick strip style cut and put butter in your skillet and let melt then add veggies add a pinch of salt and pepper and let them sautee. Rinse chicken and season with salt and pepper on both sides lay chicken in the skillet let the chicken cook (turnover so that it cooks evenly make sure not to over cook chicken). When chicken is cooked turn off fire (NO NEED TO TRANSFER TO ANOTHER PlATE) sprinkle mozzarella cheese all over the dish and let it melt. Serve in the skillet so that you can use the flavorful juices to sop up with your crusty bread.

This is a flavorful and deelish recipe! Enjoy!

One Pot Budget Meals

One Pot Budget Meals.......Fix It & Forget It!

Last night for dinner I made a tasty and budget friendly meal and the meal fed 7 people with a little leftover! It has everything in it.....Protein (Chicken) Starch (Rice) Vegetables (Mixed Veggies) and Dairy (Cheese)It is so simple and does not require any special ingredients.

Chicken & Rice Casserole

Two Boneless Chicken Fillets (Cubed)

1 1/2 cups of uncooked long grain rice

1 can of Cream of Chicken Soup

1 can of Cream of Potato Soup

1 1/2 cups of water (eye to your specifics)

1 cup of mixed vegetables

1 cup of Shredded Cheese (1/2 reserved for topping)

1 Tablespoon of butter (in pieces)

Salt

Pepper

Onion Powder

Garlic Powder

Shallow baking dish

Preheat oven to 375 degrees

In a large mixing bowl add both cans of soups and water and mix, then add salt, pepper, garlic and onion powder (to taste) and mix. Add mixed veggies and 1/2 of cup of shredded cheese, uncooked rice, uncooked chicken cubes and pieces of butter and mix together. Pour mixture into baking dish and cover put into oven and bake for 50 minutes (until chicken and rice is done) on 375 degrees. When casserole is done sprinkle remaining cheese on top and bake until cheese is melted and serve with warm buttery bread.

I have never contacted a government official before but I feel that I just had to, I could not with good conscience of being a mother of 4 beautiful children and a wife of a very hardworking man sit by and watch our government bailout wall street!

I may not be a savvy economist but I am a very concerned American citizen who happens to be strongly against the Wall Street Bailout, I say NO!!! to the bailout. Oh my goodness it is so many people struggling like ourselves and then those who have children it just breaks your hurt to think or even imagine that they may not have a bright future because of the decisions that we make today.

PLEASE Senator Obama listen to the people and vote NO for the Wall Street Bailout!

The Beauty In Tea

Who would of thought that a cup of tea would make me think about the error of my ways. Something so little and so simple gave me a profound outlook on my life today, let me start from the beginning.

I have had a major toothache and a cold for the past few days and to help me with my cold I have been making myself a cup of tea, today I put the water into my tea kettle and placed it on the stove to boil as it was boiling I scrubbed (I mean scrubbed) my stainless steel pots so that I can hang them on the wall to give me some more storage space in my cabinets for my 5 gallon buckets of rice, flour & sugar (I buy these in bulk).

After the water came to a boil I turned off the fire and placed one tea bag into the teakettle to steep. I got my cup and proceeded to pour and as I poured I thought of my husband, I thought about how he had placed a tea bag into the kettle to make more then one cup of tea many times before and how he just has this sort of old fashion wisdom that has been handed down to him by the men and women of his family, he has this wisdom on how to make things stretch and how to make due when you have to.

It got me thinking about how I have not trusted my husband, I really have not trusted my husband in the wake of all this economic troubles my trust in him has declined even further. I have felt that my husband is not prepared and has not made preparation for our safety should anything happen. I really have not put much stock in his survival abilities and neither have I put much stock in his wisdom on knowing how to rub two nickels together to make a dime.

While pouring that cup of tea from my tea kettle and knowing that if I like I could have another cup of tea or even have tea to give to the kids and it all came from that one tea bag. Something so silly, so simple made me realize how blessed I am to have a man who is really more then capable of protecting his family and making wise decisions for his family, so here I have been worrying and fretting about all the bad things going around us and how we won’t be able to survive because my husband is not capable.

That one cup of tea brightened my eyes and put a revelation in my heart, that God himself wanted me to know….that by placing faith in my husband I am placing faith in God, because God is inside my husband and through him he will guide us accordingly.

*A great smile came upon my face and a great cup of tea graced my lips!

I Wish I May, I Wish I Might, Get Those Beauties I Saw Tonight!

Ohhh My Word......do I have my eyes set on some goodies! I have always dreamed of these two things....A China Buffet and A Cozy Fireplace.

I can't contain my excitment in finding the two things that I have always dreamed of, and to think that they are available for purchase on Craigslist!

Now the only problem that stands in my way of fulfilling my lifetime dream of owning these two things...is.....FUNDS (yes I know that can be a problem or a minor mishap...*I'm thinking positive) to purchase both of these things and the choices are abundant...oh my heart is just a fluttering!

Once I come back down to earth and reality.....I may just have to take the photos of my dream China Hutch & Cozy Fireplace and place them in a frame (sighing).... well it's always fun to "Screen Shop" the internet.

If I had to choose I would purchase the China Buffet before the Cozy Fireplace. Well here are the the beauties that have caught my fancy and have made my heart flutter....and I will show you the one China Buffet that just has me so in love right now! :-)

This Is Who I Am!

For such a long time in my life I had kept a secret from everyone who knew me……I had a deep secret that I wanted to share with others but everyone always seemed more interested in what was the now thing to do. My secret is and was a sweet and pure secret a loving and kind secret…….that I pushed aside to follow what the world deemed as important……My secret was I wanted to be a HOMEMAKER, STAY AT HOME MOM, BETTY CROCKER, HOLLY HOMEMAKER, JUNE CLEAVER! That’s all I really wanted to be and that is all I want to be NOW!

At the age of (?) ahhhhh not gonna tell you, but at the age that I am today I still find myself fighting that secret. I have been dishonest with everyone in regards to what I wanted to do with my life and to this day out of fear and rejection I have still been dishonest. As a young girl I was always thought of as the smart one, the smart girl the one who would go places and do big things, so naturally I played into that…trying to fit the mold, trying to act the part and walk the walk and talk the talk and all the while I was crying inside and very confused.

My spirit was aching and longing to be simple….. To be a wife, mother and homemaker, I never really wanted to work in the corporate arena, I never really wanted to be a newscaster or journalist….its funny cause in the back of my mind I kept thinking that if I chose those career paths how was I going to stay home with my children (that's what I thought of at the age of 17). My heart was never really into any of those things but I continued to play the part of wanting to be a working career woman with her own money and her own car, apartment and etc.

I really think because of my dishonesty with myself I have caused myself and those around me undue hardship and pain, I have been living a lie for so long. I have always been interested in homemaking I have always loved movies that showed the mothers at home taking care of their children, the mothers on “Little House On The Prairie” and “Leave It To Beaver” were my idols and I secretly wanted to be like them.

Now that I am older and learning so much through my relationship with God I see the error in my ways and that I cannot fully be a homemaker until I embrace it and live out what it is God has called me to be. God has called me here and no matter how much I fight it or try to brush it off……the desires and feelings continue to get the best of me to the point where I can’t imagine doing anything else but being a wife, mother and a keeper of our home.

I pray that God will continue to keep me at home with my family and that he will continue to bless my efforts as a keeper of our home.

I know that sometimes I take things for granted.....I don't mean too, but I do. Something very tragic happened in my family this past month and it really had me thinking about all the things I take for granted in my life. God is so perfect he really does know how to bring me back to him when I get off track and even though the event in which brought me back to him is very painful....I am glad to be back in his loving arms and under his direction and protection.

I have learned a lot of things about myself as a wife, mother and as a person in general. I have learned how to be truthful with myself and to look at things in a different perspective and to appreciate all the things that God himself has blessed my family with. My heart has really changed and I am so thankful to God for all things. I have been praying for God to make me a perfect wife, mother and person and he is really working on me in perfecting my duties a a wife, mother and person.

In light of all the recent and tragic events that are occurring around us everyday......I am so thankful for all the blessings that God has given my family and I will continually pray for all the families who are really going through tough times....I ask that God will speak to their hearts and that he too may bring them back to him.

I'm sorry ladies, I know I am really late in wishing all of ya'll a Happy Mother's Day but better late then never......hummm??? just thinking about that saying for a minute........... that saying is rather rude and childish is it not? I mean it is better not to be late and it's better to face up to your tardiness then it is to make excuses for it such as "Better Late Then Never" I guess in other words that saying is really conveying "You Lucky I Even Showed Up At All! Wow! I really take that back ladies....I do apologize for my tardiness in wishing you all a Happy Mother's Day!

Okay, I don't think I'll be using that saying anymore....I've just been CONVICTED!!!

Well I hope you all had a wonderful Mother's Day, I surely did! What did I do that was so wonderful?????? I STAYED HOME in my P.J's for most of the day! I enjoyed every minute of it! My sweet and hardworking husband wanted to take me out for Mother's Day but I really was not in the mood for it....I was feeling kinda like it's just another "Hallmark Holiday" to make money and to get people to spend money on things to show Mom you care.

Well I did not want to be a part of that this year and did not want my family a part of that this year, I told them that everyday should be Mother"s Day, not saying I should get gifts everyday (would be nice) but that I should be loved and respected every day of the year!

What good does it do if you are the most disobedient, rude and obnoxious person to your mom all year round and then on Mother's Day you buy her a gift to show your love! No sweetie it does not work like that! So I just wanted the children to know that Mother's Day does not have to be about adorning me with expensive gifts but it could be about "FAMILY" .

So I made a huge pot of Chicken Soup and a Apple Pie and I was so glad that I made such a big pot because my husbands niece and her children stopped by at the spare of the moment and we were able to share our meal with her and the children as well as give her some to take home with her. The Apple Pie was a different story, cause there was none left for seconds or to take home, which made this mommy really happy!

My Mind Is Off & Wondering Again??????

There goes my mind wandering again! I was over at "Coopers Wife" and admiring her beautiful pantry, I have wanted a pantry since I could remember and it definitely would come in handy for me now as I buy a lot of bulk foods.

The question is.......how would an exposed pantry look and function in a newly remodeled kitchen. I also have dreams of moving from our little sweet home we live in now to a small and cozy home in the country.....but that's just dreams.

So for now my mind is a tick tocking away at how I could create a pantry in our small kitchen and still have it look nice but yet functional.

Here is the wall that I am considering putting up some sturdy shelves to create a built in look for an exposed pantry. What ya'll think? Suggestions are welcomed and much appreciated

Coming Up For Air!

Whew! No I am not done with my "Spring Cleaning" also known as "Home Renovation" yet, LOL! I really hope that I'll be done by the mid of April but the way things are going I just pray to get done!

I did get our room all cleaned out and painted...Yippie! I feell ashamed to say this...... but we have never painted our bedroom...it was a very ugly old white color that was looking tan because it was so old. We also had some plaster work to do in the room so that took some time. We finally finished last week......but guess what? I can't find the camera! I can't take pictures to show ya'll all the hard work we did.....I am sad :-(

Maybe the camera is hiding under the pile of junk in the basement that is constantly piling up with each and ever passing day. I'm organizing and boxing things up to take over to my aunts home to store in her garage until the garage sale that we are all having in June or July. That's fine by me cause at least I get to get the junk out of my home and put it into someone else's until the sale.....she does not mind, trust me!

I will be on the look out for the camera so that I can show you all some pictures of my progress, I am slowly but surely decorating but I am not in a rush to just put anything up for just the sake of it...I really want to put things up that my family and I will enjoy. So some spots of the kitchen look rather bare and some spots in our bedroom look bare as well but it's CLEAN...YEA!

So until then I will continue to press on with my "Spring Cleaning" also known as "Home Renovation" and I really hope to find that camera....now where would a camera hide? Humm?????

Really Quick Post!

Hi Everyone!

I only have time for a very very very quick post. I am in the process of a major "Spring Cleaning Program" and I have a goal of having everything in tip top shape by April. Soooooo I have to stay focused and try to stay motivated when it comes to the things I don' like (Ugh).

I will post pictures of a job completed! I got lots of painting, organizing and wallpaper removal to do and I pray that I will be done by the Mid of April!

Nice Finds

While out and about at Hobby Lobby I found these wonderful plaques with Bible Verses inscribed in them. Much to my delight these plaques were 50% Off! ( oh no! I won't tell you how much they were originally.......that would spoil my Bargain Shopper look I have going.....and we don't want that..now do we ).

While looking at these sweeties on the shelf I started thinking of all the great places I can put these little plaques and because I liked majority of all the sayings ( that figures) I just HAD to buy 4 of them (Bulk is Better.....right?)

I have already placed these little sweeties in and about my kitchen......but I can't show you until I have offically "Fluffed" up this area of the house for SPRING! I will soon have pictures to share with all of my "Nesting Cottagers" if there is such a word!
